Vinification and aging
Fermentation in barrels
We work with old barrels, so we use very little new oak. We use a wide variety of volumes ranging from 228, 350 to 400 liters, but we also use demi-muids and foudres, depending on the cuvées.
Long aging
Long aging embraces the rhythm of seasons. At the domain, we like the wines to go through two winters on their lees, to gain in maturity and in natural stability.
Sulfite-free winemaking
The care taken at each step of the work in the vineyard, during the harvest or during the aging process is rewarded by painless vinification. Consequently, more and more of the domaine's wines are bottled without any additives.
