Whole bunches wine making
The harvest is vinified in whole bunches to preserve the finesse and complexity of the grape varieties, while emphasizing the elegance of their original terroirs.
An infusion
The vinification takes place in traditional open tanks. Gentle gestures are favored to moderate tannins’ extraction. As with white wines, vinification and long aging are conducted without added sulfite.
