Reception of the harvest

The harvest is transported to the press in small crates to preserve the integrity of the bunches. The harvest is loaded into the presses for cycles of several hours.

Pressing

The press cycle lasts several hours and is divided into micro-stages, to gently achieve a complete extraction of the juice, including tannins. This step is essential to guarantee the structure and complexity of the wines.
